Beef share program (Local Pick-up only)

Our grass-fed and grass-finished beef is raised on pasture in the Sierra Nevada foothills. Beef Shares are available for local pick-up only and will be processed by Exeter Meats in Exeter, CA. You will be in contact with them directly to customize your cuts and packaging to your preferences. Shares are sold by hanging weight and their respective prices do not include the fees for butcher shop’s services, which will owed by the customer upon pick-up of the product.

Butcher Fees

Exexter Meats charges a rate of $1.20 per lb hanging wt. This will cost $180-$240 for quarter beef, $360-$480 for half beef, and $720-$960 for whole beef

What is hanging weight?

Hanging weight (also called dressed weight) is the weight of the carcass after initial processing - before the final butchering, trimming, and aging. Take-home weight is approximately 70% of hanging weight, accounting for bone, fat trim, and moisture loss during dry aging. The price is calculated based on the actual hanging weight of your animal.

Quarter share

$1,125 – $1,500 owed to Hatchet Peak Ranch

Hanging weight 150 – 200 lbs

Est. take-home weight 105 – 140 lbs

A great starter share for smaller households or first-time beef share buyers.

Half share

$2,250 – $3,000 owed to Hatchet Peak Ranch

Hanging weight 300 – 400 lbs

Est. take-home weight 210 – 280 lbs

Freezer space needed ~8 – 12 cu ft

Ideal for families or households that cook beef year-round.

Whole share

$4,500 – $6,000 owed to Hatchet Peak Ranch

Hanging weight 600 – 800 lbs

Est. take-home weight 420 – 560 lbs

Freezer space needed ~15 – 20 cu ft

For large families, group buys, or those who want a full year of superfood beef.

Cost Per Plate

It’s important to know the value you are receiving when purchasing bulk beef. Given that the average meal will feature a half-pound portion of meat, this is what you pay for every plate:

Half Share Example (300lbs Hanging wt.)

$2,250 to Hatchet Peak + (300lbs x $1.20/lb Processing Fee) = $2,610 Total Cost

($2,610 / 210lbs of take-home wt.) x ½ lb portion of beef = $6.21 per plate
